Description

A simple blend of warm honey and peanut butter coats oats, almonds, and rice cereal before chilling into chewy, nut-studded bars with melty chocolate chips.

Ingredients

  • 1 1/2 cup rolled oats
  • 1/2 cup chopped almonds
  • 1/2 cup crispy rice cereal
  • 1/3 cup honey
  • 1/4 cup peanut butter
  • 2 tablespoon brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips

Instructions

  1. Line an 8×8 inch pan with parchment paper, leaving overhang on two sides.
  2. In a medium saucepan over low heat, combine honey, peanut butter, and brown sugar.
  3. Stir the mixture constantly until it melts and becomes smooth, about 2 to 3 minutes.
  4. Remove the saucepan from heat and stir in vanilla extract and salt.
  5. In a large bowl, mix rolled oats, chopped almonds, and crispy rice cereal.
  6. Pour the warm peanut butter mixture over the dry ingredients and mix until well coated.
  7. Fold in mini chocolate chips quickly before the mixture cools.
  8. Transfer the mixture to the prepared pan and press firmly into an even layer.
  9. Refrigerate for at least 2 hours or until set.
  10. Use the parchment overhang to lift the bars out of the pan and cut into squares.

Notes

  • Store bars in an airtight container in the refrigerator for up to one week.
  • For a gluten-free version, use certified gluten-free oats and cereal.
  • Swap almonds for walnuts or pecans based on preference.
  • Add dried fruit or seeds for extra texture and flavor.
