A rainbow of crunchy cucumber, sweet watermelon and ripe strawberries is drizzled with bright lime oil, then sprinkled with tangy feta and fresh mint for a refreshing bite that tingles the taste buds.

Ingredients

  • 1 cup watermelon, cubed
  • 1 cup cucumber, sliced
  • 1 cup strawberries, hulled and halved
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh mint leaves, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and prepare the watermelon, cucumber, strawberries and mint leaves.
  2. In a large bowl, combine watermelon cubes, cucumber slices and strawberry halves.
  3. In a small bowl, whisk together olive oil, lime juice, salt and black pepper.
  4. Pour the dressing over the fruit and toss gently to coat.
  5. Add crumbled feta and chopped mint, then give the salad one final gentle toss.
  6. Transfer to a serving platter and serve immediately or chill for 15 minutes before serving.

Notes

  • Use seedless watermelon for a more enjoyable eating experience.
  • Fresh mint can be substituted with fresh basil for a different flavor.
  • For a sweeter dressing, add a teaspoon of honey to the lime and olive oil mixture.
  • Best served within two hours to maintain freshness and texture.
