Description

Vibrant slices of bell peppers and red onions swirl in a warm brine of apple cider vinegar, sugar, and spices, then chill to perfection. Each bite bursts with sweet tang and subtle heat.

Ingredients

  • 2 cups mixed bell peppers thinly sliced
  • 1 cup red onion thinly sliced
  • 1 cup apple cider vinegar
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon celery seeds
  • 1/4 teaspoon crushed red pepper flakes
  • 1 clove garlic minced

Instructions

  1. Combine apple cider vinegar, water, sugar, and salt in a saucepan over medium heat and stir until the sugar dissolves.
  2. Add mustard seeds, celery seeds, crushed red pepper flakes, and minced garlic to the brine and simmer for 2 minutes.
  3. Place sliced bell peppers and red onion into a heatproof bowl or jar.
  4. Pour the hot brine mixture over the vegetables, stirring to ensure even coating.
  5. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight for best flavor.
  6. Serve chilled or at room temperature as a condiment or side relish.

Notes

  • Relish can be stored in an airtight container in the refrigerator for up to 4 weeks.
  • Adjust sugar and vinegar ratios to suit your preferred level of sweetness and tang.
  • For extra crunch, rinse and drain the peppers and onions before adding the brine.
  • Wear gloves when handling hot peppers to avoid skin irritation.
