Description

Crunchy greens are layered with sweet sliced peaches, smoky bacon bits, creamy feta and crunchy pecans. A silky honey lemon vinaigrette brightens each bite, creating a perfect harmony of sweet, salty and tangy flavors.

Ingredients

  • 2 peaches
  • 6 slices bacon
  • 4 cups mixed salad greens
  • 1/2 cup thinly sliced red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pecans
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a skillet cook bacon over medium heat until crisp, then transfer to paper towels to drain.
  2. Crumble cooled bacon and set aside.
  3. In a small bowl whisk olive oil, lemon juice, honey, Dijon mustard, salt and pepper until emulsified.
  4. In a large bowl combine salad greens, sliced peaches, red onion, crumbled bacon, feta cheese and pecans.
  5. Drizzle vinaigrette over the salad and toss gently to coat.
  6. Divide salad among plates and serve immediately.

Notes

  • Use fresh ripe peaches for the best flavor
  • Substitute walnuts for pecans if preferred
  • Salad is best served immediately to prevent soggy greens
  • Vinaigrette can be prepared a day ahead and stored refrigerated
