Description

Sweet peach filling melds with vanilla and cinnamon, nestled beneath a golden, buttery batter studded with coarse sugar for crackling bites. Warm from the oven, each spoonful oozes juicy fruit and rich, comforting flavors.

Ingredients

  • 6 cups sliced fresh peaches
  • 1 cup granulated sugar for filling
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1 cup granulated sugar for batter
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter
  • 2 tablespoons coarse sugar

Instructions

  1. Preheat oven to 375°F and place the butter in a 9×13-inch baking dish to melt while the oven heats.
  2. In a large bowl, combine peaches, granulated sugar for filling, cornstarch, lemon juice, vanilla extract, cinnamon, and nutmeg; toss gently to coat.
  3. In another bowl, whisk together flour, granulated sugar for batter, baking powder, and salt; stir in milk until just combined.
  4. Remove the baking dish from the oven and pour the batter evenly over the melted butter without stirring.
  5. Spoon the peach mixture evenly over the batter; do not stir to allow the batter to rise around the fruit.
  6. Sprinkle coarse sugar over the top for a crisp finish.
  7. Bake until the cobbler is golden brown and bubbling, about 40 to 45 minutes.
  8. Let rest for 10 minutes before serving to allow the juices to set.

Notes

  • For best results use ripe, but still firm, fresh peaches
  • Avoid mixing layers once assembled to achieve a traditional “cobbled” texture
  • Serve warm with vanilla ice cream or whipped cream for a classic pairing
  • Store any leftovers covered in the refrigerator for up to 3 days and reheat gently before serving
