Description
Molten butter, sugar, and milk bubble into a glossy chocolate syrup that coats oats and peanut butter in each spoonful. In minutes, these clusters set into chewy, melt-in-your-mouth bites that kids and grown-ups both crave.
Ingredients
- 1/2 cup butter
- 2 cups granulated sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 3 cups quick oats
- 1 teaspoon vanilla extract
- 1/2 cup creamy peanut butter
Instructions
- In a medium saucepan over medium heat combine butter, sugar and milk.
- Stir until the butter has melted and bring the mixture to a rolling boil.
- Allow the mixture to boil for 60 seconds while stirring constantly to prevent burning.
- Remove the pan from heat and whisk in cocoa powder and salt until smooth.
- Stir in oats, vanilla extract and peanut butter until fully coated.
- Let the mixture stand for a couple of minutes to thicken slightly.
- Drop spoonfuls onto parchment paper and let cookies set at room temperature for about 30 minutes.
Notes
- Store cookies in an airtight container for up to 5 days.
- Use old-fashioned oats for a chewier cookie texture.
- Adjust boiling time for softer or firmer cookies.
- Be careful not to overcook the sugar mixture to prevent hard cookies.
