Description

A fudge-like blend of dates, walnuts, and cocoa dusted in flaky coconut brings chewy, chocolatey pops that satisfy your sweet tooth with wholesome ingredients.

Ingredients

  • 1 cup pitted dates
  • 1 cup walnuts
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1/4 cup shredded coconut

Instructions

  1. Place pitted dates and walnuts in a food processor and pulse until coarsely chopped.
  2. Add cocoa powder, vanilla extract, and salt to the processor and blend until mixture clumps together.
  3. Transfer mixture to a bowl and refrigerate for 10 minutes to firm up slightly.
  4. Scoop out tablespoon-sized portions and roll into bite-sized balls.
  5. Roll each ball in shredded coconut to coat evenly.
  6. Chill the brownie bites in the refrigerator for at least 30 minutes before serving.

Notes

  • Store brownie bites in an airtight container in the refrigerator for up to one week.
  • For extra sweetness, add 1 tablespoon of maple syrup during blending.
  • Substitute walnuts with almonds or pecans for a different nutty flavor.
  • Freeze bites on a baking sheet before transferring to a freezer bag for longer storage.
