Description

Warm from the fryer, these mini doughnuts boast a crisp exterior and fluffy inside, dripping with buttery richness and dusted in sweet cinnamon sugar. Perfect for sharing or sneaking one (or three).

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoons melted butter for batter
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons melted butter for coating
  • 1/4 cup granulated sugar for coating
  • 1 teaspoon ground cinnamon for coating
  • 2 cups vegetable oil

Instructions

  1. In a large bowl whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl beat the milk, egg, melted butter for batter, and vanilla until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  4. Heat the vegetable oil in a deep pan or fryer to 350°F (175°C).
  5. Using a small spoon or piping bag, drop rounded dollops of batter into the hot oil and fry until golden brown, about 1 to 2 minutes per side.
  6. Remove the doughnuts with a slotted spoon and drain briefly on paper towels.
  7. While still warm, brush each doughnut with the melted butter for coating, then toss in the cinnamon-sugar mixture until evenly coated.
  8. Arrange on a platter and serve immediately while hot.

Notes

  • Batter should be thick but pipeable; stir gently to keep doughnuts light and tender.
  • Maintain oil temperature by frying in small batches without overcrowding.
  • For extra warmth and spice, add a pinch of nutmeg or cardamom to the cinnamon sugar.
  • Store any leftovers in a covered container and reheat in a warm oven for 5 minutes before serving.
