Description

Juicy mangoes and strawberries mingle with creamy avocado and tender edamame in this colorful salsa, brightened by lime and jalapeño for a perfect balance of sweet, creamy, and zesty heat.

Ingredients

  • 1 cup diced mango
  • 1 cup diced strawberries
  • 1 medium avocado diced
  • 1 cup shelled edamame cooked and cooled
  • 1/4 cup finely chopped red onion
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chopped fresh cilantro
  • 1 small jalapeño finely chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. In a large bowl combine diced mango, diced strawberries, diced avocado and shelled edamame.
  2. Add finely chopped red onion, jalapeño and chopped cilantro to the bowl.
  3. Pour fresh lime juice over the mixture and season with salt and black pepper.
  4. Gently toss all ingredients until they are evenly coated.
  5. Let the salsa rest for about 5 minutes to allow the flavors to meld before serving.

Notes

  • For best texture serve the salsa immediately after mixing.
  • Customize the heat by adjusting the amount of jalapeño.
  • Store any leftovers in an airtight container in the refrigerator for up to 2 days.
  • Serve with tortilla chips or as a topping for grilled fish or chicken.
