Description

This sorbet blends ripe watermelon puree with fresh lime and mint, freezing into silky, jewel-toned scoops that melt on your tongue with each juicy, cool burst.

Ingredients

  • 4 cups seedless watermelon cubed and chilled
  • 1/4 cup granulated sugar
  • 2 tbsp fresh lime juice
  • 1 tbsp fresh mint leaves chopped
  • 1 pinch salt

Instructions

  1. Combine watermelon, sugar, lime juice, mint, and salt in a blender.
  2. Blend on high until completely smooth.
  3. Taste and adjust sweetness or lime juice as desired.
  4. Pour the puree into a shallow freezer-safe container.
  5. Freeze for 2 hours, stirring vigorously with a fork every 30 minutes to break up ice crystals.
  6. Once the sorbet is firm yet scoopable, serve immediately or store covered in the freezer.

Notes

  • For best results, use very ripe, sweet watermelon
  • If you prefer a finer texture, strain the puree before freezing
  • You can substitute honey or agave syrup for sugar if desired
  • Allow sorbet to sit at room temperature for a few minutes before scooping for easier serving
