Description

These crepes unfold like thin, golden lace—airy interiors cradle juicy strawberries or a sprinkle of cheese, giving you a crisp edge and melt-in-your-mouth softness in every bite.

Ingredients

  • 1 cup all purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs separated
  • 1 1/4 cups whole milk
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon vegetable oil

Instructions

  1. In a medium bowl whisk together flour, sugar, baking powder, and salt until well combined.
  2. In a separate bowl whisk egg yolks, milk, melted butter, and vanilla extract until smooth.
  3. Gradually pour the wet ingredients into the dry ingredients, whisking until a smooth batter forms.
  4. In a clean bowl beat the egg whites with an electric mixer until soft peaks form, then gently fold them into the batter.
  5. Let the batter rest at room temperature for 15 minutes to allow bubbles to settle.
  6. Heat a nonstick skillet over medium heat and lightly brush with vegetable oil.
  7. Pour about 1/4 cup of batter into the skillet, swirl to coat the bottom, and cook for 1 to 2 minutes until the edges lift and the bottom is lightly golden.
  8. Flip the crepe and cook for an additional 30 seconds, then transfer to a warm plate and cover to keep warm.
  9. Repeat with remaining batter, brushing the skillet with oil as needed before each crepe.
  10. Serve warm with your choice of fillings or toppings.

Notes

  • Resting the batter allows the flour to fully hydrate and results in more tender crepes.
  • Folding in whipped egg whites creates extra air and a lighter texture.
  • Keep finished crepes warm in a low oven (around 200°F) to maintain softness.
  • Customize with sweet fillings like fruit and whipped cream or savory options like cheese and herbs.
