Description

Experience zingy lemon curd swirling around plump blackberries atop a buttery crust that bakes to golden perfection, then cools into vibrant, tantalizing squares bursting with tart and sweet flavor.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup heavy cream
  • 1 cup fresh blackberries

Instructions

  1. Preheat oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. In a bowl combine 1 cup flour, 1/4 cup sugar, and 1/4 teaspoon salt then add melted butter and stir until mixture resembles coarse crumbs.
  3. Press crumb mixture firmly into the bottom of the prepared pan and bake until golden, about 15 minutes.
  4. In another bowl whisk together eggs, 1 cup sugar, 2 tablespoons flour, and 1/4 teaspoon salt until smooth, then stir in lemon juice, lemon zest, and heavy cream.
  5. Remove crust from oven, scatter blackberries evenly over the top, then pour lemon mixture over the berries.
  6. Return to oven and bake until filling is set, about 20 to 25 minutes.
  7. Allow bars to cool completely at room temperature, then refrigerate for at least 2 hours.
  8. Lift bars from pan using the parchment paper and cut into squares before serving.

Notes

  • Bars can be dusted with powdered sugar before serving for extra sweetness.
  • Use fresh blackberries for the best flavor and texture.
  • Store in an airtight container in the refrigerator for up to 4 days.
  • Substitute raspberries or blueberries for a different berry variation.
