Description

Juicy peach slices coated in cinnamon-spiced sugar bubble beneath a golden, buttery crust. Warm aromas fill the kitchen as each mini cobbler hides tender fruit beneath a crisp, melt-in-your-mouth topping.

Ingredients

  • 2 piece medium peach peeled and sliced
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1/4 tsp ground cinnamon
  • pinch salt
  • 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 2 tbsp granulated sugar
  • pinch salt
  • 1/4 cup milk
  • 3 tbsp cold unsalted butter cubed

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl combine peaches, 2 tbsp granulated sugar, lemon juice, ground cinnamon, and pinch salt.
  3. Divide the peach mixture evenly among four small ramekins.
  4. In a separate bowl whisk together flour, baking powder, 2 tbsp granulated sugar, and pinch salt.
  5. Stir in milk until just combined.
  6. Cut in cold cubed butter until the mixture resembles coarse crumbs.
  7. Spoon the topping over the peaches, dividing it evenly.
  8. Bake for about 20 minutes or until the topping is golden and the filling is bubbly.
  9. Allow the cobblers to cool for a few minutes before serving.

Notes

  • For a richer crust you can use half butter and half margarine.
  • Serve warm with vanilla ice cream or whipped cream.
  • Substitute frozen peaches if fresh are unavailable.
  • Store leftovers covered in the refrigerator for up to 2 days.
