Description

These vibrant pink gummies deliver a juicy strawberry punch in every bite, lightly sweetened with honey and brightened by lemon juice. Silky texture, refreshing taste—fun to make and impossible to resist.

Ingredients

  • 1 cup strawberries hulled and diced
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 3 tablespoons unflavored gelatin powder
  • 1/4 cup water

Instructions

  1. Place the strawberries in a blender and puree until smooth.
  2. In a small bowl, sprinkle the gelatin over the water and let it bloom for 5 minutes.
  3. Transfer the bloomed gelatin to a saucepan and gently heat over low heat, stirring until fully dissolved.
  4. Remove the saucepan from heat and whisk in the strawberry puree, honey, and lemon juice until well combined.
  5. Pour the mixture into silicone molds or a lightly oiled baking dish.
  6. Refrigerate for at least 2 hours or until the gummies are firm.
  7. Carefully pop the gummies out of the molds or cut into shapes if using a baking dish.

Notes

  • For a vegan version substitute agar-agar (use package ratio) instead of gelatin.
  • Taste the mixture before setting and add more honey if you prefer sweeter gummies.
  • Store the gummies in an airtight container in the refrigerator for up to one week.
  • Lightly oil the molds or dish to make removing the gummies easier.
