- 1 pound boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 head romaine lettuce, shredded
- 1/2 cup Caesar dressing
- 1/2 cup grated Parmesan cheese
- 1/2 cup cherry tomatoes, halved
Instructions
- Preheat the oven to 375°F.
- Season the chicken breasts with garlic powder, salt, and black pepper.
- Heat the olive oil in a skillet over medium heat and cook the chicken 6–7 minutes per side until golden and cooked through, then let it rest and slice.
- In a small saucepan, melt the butter over low heat, stir in the minced garlic and parsley, and cook for 1–2 minutes until fragrant.
- Slice the sub rolls lengthwise and place them on a baking sheet, then brush the cut sides with the garlic butter and toast in the oven for 5 minutes until golden.
- In a large bowl, toss the shredded romaine lettuce with Caesar dressing, Parmesan cheese, and cherry tomatoes.
- Fill each toasted sub roll with sliced chicken and top with the Caesar salad mixture.
- Drizzle any remaining garlic butter over the subs and serve immediately.
Notes
- You can substitute grilled rotisserie chicken for a time saver.
- Adjust the amount of Caesar dressing to your taste preference.
- For extra crunch, add homemade croutons inside the sub.
- Store leftover components separately to keep the bread from getting soggy.
