Description

Juicy peach slices nestled among ripe tomato rounds and pillowy mozzarella, kissed by fragrant basil and glistening in olive oil and balsamic glaze. A light, colorful salad that balances sweet, tangy, and creamy in every bite.

Ingredients

  • 2 large peaches
  • 2 large tomatoes
  • 8 oz fresh mozzarella cheese
  • 20 fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Slice the peaches, tomatoes, and mozzarella into even rounds.
  2. Arrange the slices on a platter, alternating peach, tomato, and mozzarella.
  3. Tuck basil leaves between the layers of fruit and cheese.
  4. Drizzle the olive oil and balsamic glaze evenly over the salad.
  5. Season with salt and black pepper.
  6. Let the salad rest at room temperature for 5 minutes before serving.

Notes

  • Use ripe but firm peaches for best texture
  • Substitute burrata cheese for a creamier option
  • Drizzle balsamic glaze just before serving to maintain freshness
  • Serve immediately to enjoy peak flavors and prevent sogginess
