Description

This salad bursts with juicy apple wedges, crisp cucumber ribbons, and minty brightness, all coated in a tangy lemon-honey vinaigrette that glistens with flavor.

Ingredients

  • 2 medium cucumbers
  • 1 large apple
  • 1/4 cup red onion
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh mint leaves

Instructions

  1. Wash and thinly slice the cucumbers.
  2. Core the apple and cut into thin wedges or bite-size pieces.
  3. Thinly slice the red onion.
  4. In a large bowl whisk together lemon juice, olive oil, honey, salt, and pepper.
  5. Add cucumbers, apple, onion, and mint leaves to the bowl and toss gently to coat.
  6. Refrigerate the salad for at least 10 minutes before serving.

Notes

  • You can substitute lime juice for lemon juice for a tangy twist.
  • Add walnuts or almonds for extra crunch.
  • For a spicy kick, sprinkle some chili flakes.
  • Best served chilled within an hour of preparation.
