Description

Fresh arugula leaves are bathed in a sweet-tangy honey-balsamic dressing, then topped with juicy figs, crumbled goat cheese, and toasted walnuts for a perfect balance of peppery, creamy, and crunchy textures.

Ingredients

  • 2 cups arugula
  • 4 medium figs sliced
  • 3 oz goat cheese crumbled
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 2 tbsp walnuts chopped

Instructions

  1. Wash and dry the arugula thoroughly, then place it in a large bowl.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper to make the dressing.
  3. Slice the figs and add them to the bowl with the arugula.
  4. Pour the dressing over the arugula and figs, and toss gently to coat.
  5. Sprinkle the crumbled goat cheese and chopped walnuts over the top.
  6. Serve immediately on chilled plates for best presentation.

Notes

  • For best flavor use ripe, soft figs that give slightly when pressed.
  • Toast walnuts briefly in a dry pan to enhance their crunch and aroma.
  • Substitute pecans or sliced almonds if walnuts aren’t available.
  • Drizzle extra honey on top for a sweeter finish.
