Description

Cool cucumber slices and juicy tomato wedges mingle with crisp red onion and garlic, all coated in a bright lemon-olive oil dressing and dotted with fresh dill.

Ingredients

  • 2 medium cucumbers
  • 3 medium tomatoes
  • 1/2 medium red onion
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 clove garlic
  • 1 tablespoon fresh dill

Instructions

  1. Wash and pat dry the cucumbers and tomatoes.
  2. Slice cucumbers into thin rounds and cut tomatoes into bite-sized wedges.
  3. Peel and thinly slice the red onion and mince the garlic.
  4. In a large bowl, combine cucumbers, tomatoes, red onion, and garlic.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  6. Pour the dressing over the vegetables and gently toss to coat evenly.
  7. Sprinkle fresh dill over the salad and toss lightly before serving.

Notes

  • For extra flavor, crumble feta cheese over the top.
  • You can substitute lemon juice with red wine vinegar.
  • Let the salad rest for 10 minutes to allow flavors to meld.
  • Serve chilled for a refreshing side dish.
