Description

This cobbler layers tender, cinnamon-kissed peach slices under spoonfuls of nutty brown butter batter that bakes into a crisp, golden topping. Warm fruit juices bubble around every nugget of buttery crust, perfect with creamy ice cream.

Ingredients

  • 6 medium peaches peeled and sliced
  • 1/4 cup granulated sugar
  • 2 tablespoons light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 4 tablespoons unsalted butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small skillet melt the butter over medium heat and cook until it foams and turns golden brown, about 3–4 minutes, then remove from heat.
  3. In a bowl combine peaches, 1/4 cup granulated sugar, light brown sugar, cinnamon, vanilla extract, and lemon juice, tossing to coat evenly.
  4. Transfer the peach mixture to a greased baking dish.
  5. In another bowl whisk together flour, 1/2 cup granulated sugar, baking powder, and salt.
  6. Stir the browned butter, egg, and milk into the dry ingredients until just combined to form the batter.
  7. Drop spoonfuls of the batter evenly over the peaches, gently spreading to cover most of the fruit.
  8. Bake for 35–40 minutes or until the topping is golden and the peaches are bubbling.
  9. Let the cobbler rest for 10 minutes before serving.

Notes

  • Use ripe, juicy peaches for the best flavor.
  • Frozen peaches can be used if fresh are not available; thaw and drain excess liquid.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
  • Browning the butter adds a rich, nutty depth to the topping.
