Description

Tender baby spinach mingles with burst blueberries, salty feta, and crisp pecans, all enlivened by a sweet honey-balsamic dressing that dances on the palate with bright, zesty notes.

Ingredients

  • 5 oz baby spinach
  • 1 cup fresh blueberries
  • 1/4 cup thinly sliced red onion
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted pecans
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper until well combined.
  2. Place baby spinach and sliced red onion in a large salad bowl.
  3. Add fresh blueberries, crumbled feta cheese, and toasted pecans on top of the spinach mixture.
  4. Drizzle the honey balsamic dressing over the salad.
  5. Gently toss all ingredients until the leaves and toppings are evenly coated with dressing.
  6. Serve immediately for the freshest flavor.

Notes

  • Use baby spinach for a tender texture and mild flavor.
  • Substitute arugula or mixed greens if you prefer a peppery or varied base.
  • Swap pecans for sliced almonds or walnuts for a different crunch and taste.
  • Prepare and dress the salad just before serving to prevent wilting.
