Description

A tender muffin bursting with tart apple bits and swirls of velvety cheesecake, finished with a crunchy cinnamon-oat topping that shatters with each bite.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 cup peeled diced apples
  • 4 ounces cream cheese softened
  • 1/4 cup powdered sugar
  • 1/3 cup rolled oats
  • 1/4 cup brown sugar packed
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter cold diced
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl whisk together the flour, baking powder, baking soda, salt, ground cinnamon, granulated sugar, and 1/4 cup brown sugar.
  3. In a separate bowl whisk the egg, milk, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, then fold in the diced apples.
  5. Spoon about two tablespoons of batter into each muffin cup.
  6. In a small bowl beat the cream cheese and powdered sugar until creamy, then drop about one teaspoon of cheesecake filling atop the batter in each cup.
  7. Divide the remaining batter evenly over the filling layer in each muffin cup.
  8. In another bowl combine the oats, 1/4 cup brown sugar, 2 tablespoons flour, ground cinnamon, and cold diced butter; rub with your fingertips until crumbly.
  9. Sprinkle the oat crisp topping evenly over each muffin.
  10. Bake for 18–22 minutes until the tops are golden and a toothpick inserted comes out clean around the edges. Cool in the tin for 5 minutes, then transfer to a wire rack.

Notes

  • Store muffins in an airtight container at room temperature for up to 3 days.
  • Reheat gently in a microwave or toaster oven for a warm treat.
  • Tart apples like Granny Smith hold their texture best in this recipe.
  • Avoid overmixing the batter to keep the muffins light and tender.
