Tart apple rounds and crisp arugula leaves mingle with crunchy toasted walnuts and creamy feta in a zippy lemon-honey dressing, offering a lively crunch and balanced tang in every bite.

Ingredients

  • 1 large apple thinly sliced
  • 3 cups arugula leaves
  • 1/4 cup walnuts toasted
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. Place arugula leaves in a large bowl.
  2. Add sliced apple, toasted walnuts, and crumbled feta cheese to the bowl.
  3. In a small bowl whisk together olive oil, lemon juice, honey, salt, and pepper until well combined.
  4. Pour the dressing over the salad ingredients.
  5. Toss gently to coat everything evenly.
  6. Serve immediately.

Notes

  • Use a crisp apple variety like Granny Smith or Honeycrisp for best texture.
  • Toast walnuts in a dry pan over medium heat for 2–3 minutes to enhance flavor.
  • Adjust honey and lemon juice balance to suit your taste preferences.
  • Salad is best served fresh but can be chilled for up to 1 hour before serving.
